Marinade
HERE'S WHAT YOU'LL NEED:
- 1/4 minced fresh parsley
- 1 to 2 teaspoons chopped thyme and/or rosemary (if fresh herbs aren't available, use 1/2 teaspoon dried herbs)
- 1/4 cup red wine vinegar
- 1/2-cup olive oil
- 1 garlic clove, minced
- 1-teaspoon salt and 1/4 teaspoon freshly ground pepper
LET'S GET STARTED:
Pour marinade ingredients into a large zipper-style plastic bag. Add 1 ½ pounds top sirloin beef or lamb cut into 1 ½-inch cubes. Marinate for 2 hours in the refrigerator.
Assembling the Kabobs
HERE'S WHAT YOU'LL NEED:
- 1 large red onion peeled and cut into large chunks
- 1 red, 1 green and 1 yellow bell pepper, cored, seeded and cut into 2" chunks
- 8-12 cherry tomatoes
- 1 1/2 pounds marinated top sirloin beef or lamb cut into 1 1/2" cubes
- 4-6 metal or wooden skewers (soak wooden skewers in water for 1/2 hour before using to prevent burning)
LET'S GET STARTED:
- Set out all of the ingredients in front of you. Thread onion, vegetables and meat on skewers alternating as you go. Leave a small space between each item.
- Use cherry tomatoes as stoppers at each end.
- Place kabobs on hot grill for about 10 minutes, turning skewers occasionally. Pierce meat to check the interior to be sure it is done.
- Serve kabobs with pita bread and your favorite creamy dressing.
