Segment #4 - Taffy
Recipe -
Taffy
HERE'S WHAT YOU'LL NEED:
- 2 cups sugar
- 1 cup light corn syrup
- 1-1/2 cups water
- 1-1/2 teaspoons salt
- 2 teaspoons vegetable glycerin
- 2 tablespoons butter
- 5 drops food coloring
- 2 teaspoons lemon or lime juice
- waxed paper
LET'S GET STARTED:
- Measure sugar, corn syrup, water, salt and glycerin into a large saucepan.
- At medium high heat bring the mixture to 255 degrees F (it should read "hard ball" on a candy thermometer).
- Stir in butter and food coloring. Remove from burner immediately.
- Pour the mixture onto a greased cookie sheet with sides. (adults only).
- Use a metal spatula to fold the edges over (approximately 1/2") to keep them from hardening too quickly.
- When the mixture is cool enough to handle, brush on the lemon or lime juice.
- Mixture is now ready to pull.
- Butter your hands well and stretch the taffy until it is elastic and satiny, about 5-15 minutes.
- Pull into a long rope and cut into 1-inch bite-size pieces using butter knife or kitchen scissors.
- Wrap pieces individually in wax paper squares.
Note: Remove hand jewelry before pulling.
