Episode 115 - Simply Cooking

Recipe - Popovers

HERE'S WHAT YOU'LL NEED:

  • 1 popover pan*
  • 1 cup whole milk
  • 3 eggs
  • 1 cup flour
  • Pinch of salt

*You may use ovenproof custard cups or a muffin pan with some success, but popovers rise best in a deep and narrow popover style pan.

LET'S GET STARTED:

  1. Preheat oven to 425 degrees.
  2. Blend all of the ingredients in a blender until smooth. Pour into greased popover pan two-thirds full.
  3. Bake for 20 minutes. Don't peek! Reduce oven temperature to 350 degrees and bake for an additional 20 minutes until well browned and crusty.
  4. Remove from oven immediately.   Release steam by poking each one with a knife. Cool.
  5. Slice off top. Fill hollow center with crab (see recipe below), tuna or egg salad.

TIP: Popovers are delicious hot out of the oven with butter or jelly. When cool, they can also be frozen and re-heated in a 425 degree oven for 2 minutes or until crisp.
