Episode 115 - Simply Cooking
Segment #3 - Dinner
Recipe - Chicken & Dumplings

HERE'S WHAT YOU'LL NEED:

  • 3-4 pound chicken cut-up
  • Salt and pepper to taste
  • 4 tablespoons butter
  • 1 large onion, chopped
  • 1/3 cup flour
  • 3 cups chicken broth
  • 8 ounces fresh mushrooms
  • 3 carrots, peeled and diced
  • 3 celery stalks, diced
  • 1 teaspoon thyme
  • Dumpling dough (see recipe below)

LET'S GET STARTED:

  1. Season chicken with salt and pepper.
  2. Melt butter in a large frying pan and brown chicken.
  3. Place browned chicken into a Dutch oven or stew pot. Keep drippings in the frying pan.
  4. Sauté the chopped onion in the drippings in the frying pan until tender, adding more butter if necessary. Add flour and cook for 1 minute. Whisk in chicken broth. Simmer. Add vegetables and thyme.
  5. Add mixture to chicken.   Drop dumpling dough by spoonfuls on top.   (See recipe for preparing dumplings below). Cover and cook about 40 minutes until chicken is tender and dumplings are cooked through.

DUMPLINGS

HERE'S WHAT YOU'LL NEED:

  • 2/3 cup milk
  • 2 cups of biscuit mix

LET'S GET STARTED:

Mix together milk and biscuit mix until soft dough forms. Drop 8 spoonfuls into the Dutch oven, on top of the chicken stew. The biscuits will expand, so be careful not to overload the pot!
