Episode 116 - Try, Try Again
Segment #4 - Quesadillas
Activity - Quesadillas

HERE'S WHAT YOU'LL NEED:

  • Six large flour tortillas

Bean Dip   ( Blend all ingredients in blender or food processor until smooth)

  • 1 15 oz can black beans, drained
  • 1/4 cup cream cheese
  • 1/4 cup lemon juice
  • 1 tablespoon cumin powder
  • 1 teaspoon Louisiana hot sauce or your favorite hot sauce
  • 2 teaspoons prepared roasted garlic or 1 teaspoon powdered garlic
  • 1/4 teaspoon sea salt
  • 1 tablespoon fresh cilantro (optional)

Fillings to taste :

  • Shredded cooked chicken
  • Shredded Monterey jack cheese
  • Finely chopped green onions
  • Diced and drained, canned green chili peppers
  • Seeded fresh tomato

LET'S GET STARTED:

  1. Spread some of the bean dip mixture on half of a large flour tortilla.   Top with the following ingredients according to taste:
  2. Carefully fold the tortilla in half.   Cook on a large skillet or griddle over medium heat for a bout 2 minutes on each side or until lightly browned.  
  3. Cut quesadillas in half or thirds.   Serve with guacamole and salsa if you wish.
