Recipe - Vegetable Ribbon Salad
HERE'S WHAT YOU'LL NEED:
- 10 ounces colorful fettuccine pasta, cooked, drained and rinsed.
- 2 carrots
- 2 green zucchini
- 1 yellow squash
- broccoli stems
- 4 scallions
- 1/2 cup Caesar style salad dressing
- 1/2 cup freshly grated Parmesan cheese
LET'S GET STARTED:
- With a potato peeler, peel thin strips of washed zucchini, broccoli stems, carrot, and yellow squash into a bowl. Include the skin of the vegetable, if desired.
- Tear several greens from the scallions into thin strips.
- In a large serving bowl, toss vegetables and cooked pasta. Add dressing and top with cheese.
