HERE'S WHAT YOU'LL NEED:
• 3 tablespoons olive oil
• 1 large garlic clove, minced
• 1 fennel bulb, core removed, cut into strips
• 1 large onion, sliced
• 1 medium zucchini, cut into strips
• 1 medium yellow squash, cut into strips
• 1 red pepper, cut into strips
• 1 pound of penne pasta, cooked al dente
• Salt and pepper to taste
• Grated Parmesan cheese to taste
• 5-6 fresh basil leaves
LET'S GET STARTED:
- Heat olive oil in a heavy skillet and briefly sauté the garlic, then add the fennel, onions, zucchini, squash, and red pepper. Cook quickly to retain crispness.
- Toss the vegetables into the drained pasta along with the Parmesan cheese. Season with salt and pepper. Top with fresh basil.
