Activity - Pasta Tutto Giardino

HERE'S WHAT YOU'LL NEED:

• 3 tablespoons olive oil
• 1 large garlic clove, minced
• 1 fennel bulb, core removed, cut into strips
• 1 large onion, sliced
• 1 medium zucchini, cut into strips
• 1 medium yellow squash, cut into strips
• 1 red pepper, cut into strips
• 1 pound of penne pasta, cooked al dente
• Salt and pepper to taste
• Grated Parmesan cheese to taste
• 5-6 fresh basil leaves

LET'S GET STARTED:

  1. Heat olive oil in a heavy skillet and briefly sauté the garlic, then add the fennel, onions, zucchini, squash, and red pepper. Cook quickly to retain crispness.
  2. Toss the vegetables into the drained pasta along with the Parmesan cheese. Season with salt and pepper. Top with fresh basil.

Note: Serve warm with French bread. Leftovers make a nice cold pasta salad with chicken breast on the side.
