Segment #2 -Caribbean Chicken
Recipe - Caribbean Chicken
HERE'S WHAT YOU'LL NEED:
- 4 boneless skinned chicken breasts, dredged in flour, seasoned with salt and pepper
- 2 tablespoons prepared curry powder or homemade curry powder (see recipe below)
- 4 tablespoons finely diced yellow onion
- 4 tablespoons finely diced carrots
- 4 tablespoons finely diced celery
- 15 ounces cream of coconut milk
- 1/4 cup finely diced green apples
- 1/2 cup golden raisins
- 2 tablespoons flaked or fresh coconut grated
- juice of 1 lime
- 1 teaspoon fresh thyme leaves
LET'S GET STARTED:
- Heat oven to 350 degrees F.
- Lightly sauté chicken in oil on skillet until brown on both sides. Sprinkle curry powder on both sides. Set aside.
- Put onions, carrots and celery in roasting pan and set browned chicken on top.
- Pour coconut cream and sprinkle apples, raisins and coconut over chicken. Pour lime juice on top and sprinkle with fresh thyme.
- Bake for 20 minutes or until chicken is done and vegetables are tender.
- Serve with plantain spiders . (See recipe below).
Homemade Curry Powder HERE'S WHAT YOU'LL NEED:
- 1/4 teaspoon mustard seeds
- 1/4 teaspoon cardamon seeds
- 1/4 teaspoon black peppercorns
- 2 tablespoons coriander seeds
- 1 tablespoon fenugreek seeds
- 1-inch cinnamon stick
- 1 tablespoon curry powder from a jar
- 1 teaspoon chili powder
- 1/4 teaspoon ground ginger
- 1 tablespoon turmeric
LET'S GET STARTED:
- Place mustard seeds, cardamon seeds, peppercorns, coriander seeds, fenugreek and cinnamon in dry skillet.
- Toast over medium heat until seeds pop, the fragrance is released and it is slightly smoking--about 3 minutes. If you have fresh curry leaves, toast them separately but in half as much time as they are more fragile. Cool.
- Place all spice ingredients in grinder and grind into a smooth powder.
